- 6 Ears of Molnar Farms Corn
- 1 cup Mayonnaise
- 1 pinch Kosher Salt
- 1 pinch Fresh Ground Black Pepper
- 1 cup Cojita Cheese Crumbles
- ½ cup Ancho Chili Aioli
- ¼ cup Chopped Cilantro
- 2 tbsp Chili Lime Dust
- ¼ cup Toasted Pepitas
Method
Roasted Beet Preparation

Peel and remove silk from corn.

Boil ears of corn in salted water or over a fire grill.

Brush with mayonnaise

Sprinkle with Cotija cheese.

Sprinkle ears with chili lime dust.

Drizzle corn with ancho chili aioli.

Garnish with chopped cilantro and pepitas.
